Turkey Sausage Stuffing step by step

I have posted about this but I realized I never made a step by step

2 lbs Jamestown Sausage (use what you like)
1 large white Onion(medium diced)
2 Carrots (diced)
5 Celery Stalks (diced)
7 Medium size Red Potatoes Peeled(medium diced)

Saute Carrot & Celery for a few minutes
I used Bacon Grease

Add Onion cook a few more minutes
Add some seasoning (thyme,parsley,ground sage,black pepper)

Remove from pan set aside
Brown the sausage

Add veggies back in over low heat get them flavors together

Cook potatoes till fork tender (firmer if you like)
again add them back in cook a little more

Cool a little transfer to casserole dish
This will be baked at 350°F to brown on top
Check the IT make sure it get to 165°F

You can use this to stuff your Turkey as it says Sausage Stuffing
LET STUFFING COOL IN FRIDGE OVER NIGHT BEFORE STUFFING THE BIRD

I've had and made sausage stuffing before, but never with potatoes. Sounds really good and a nice step-by-step

Chris I have seen recipes that used Bread Stuffing, with different things added.I have change this a few times trying different stuff always come back to this.It is one thing my Mom could cook,made another of the family tradition that I am probably the only one of my family doing it.
