Turkey Pastrami

Well it all started three weeks ago when I received my free turkey at the grocery store .
The wife and I decide to share it.. I cut it up and gave her everything but the breasts to make soup.
I mixed up a gallon of Pops brine and added 1 1/2oz of pickling spices and 1 tps of #1 salt
 
Five days later out of the brine and washed under cool water . Then painted grainy mustard all over it
And added this rub:
Pastrami Rub
2 tbs allspice
1 tbs ground pepper
1tbs garlic power
1 tsp paprika
1 tsp coriander
And let that set 1 hr in the fridge
Then use Jeff's rub as a finish
While the turkey was sleeping , I picked up a three lb
Corned beef which I desalivated for a day and added
The same rub minus the salt , to it.
 
Looks delicious!!

I'm going to have to thaw some out for a pastrami sammie for lunch!
