So I decided to smoke a 15lb turkey today... Here is the Q-view ...

Injected with creole butter and sprinkled with Tony C's seasoning... Prepped

Time to fire up the smoker.. Full chimney of KBB.

Half ring of unlit coals with some apple and cherry chunks mixed in..

1 hour in and im holding about 325 where the turkey sits..

Got the IT to 165 and pulled.... Got the skin fairly crispy..

Nice looking bird, I wanted to use Tony's on mine last week, but unfortunately I couldn't find it in the local grocer's.

Point for sure.

Awesome looking bird..I got several post holiday breast only in the freezer. I can have smoked turkey any time of year..
Question for OP: is the bottom of your WSM attached to the roller setup you have? I need to do something like that for my WSM.

Yes.. It's a 1 hour project.. 3 pieces of punched angle iron and 3 wheels ( Lowes ).. Here is a picture...If your is a 22, cut 3 pieces of angle iron ( I used a hacksaw) exactly 25 1/4 inches..Get 3 wheels with 3/8 inch thread..Align the last hole in each piece of iron and install the wheels with a lock washer and nut....The wsm legs fit just inside the bolts from the wheels... You then add a tie straps to each leg thru the iron... Here are some pics... Get wheels with brakes if needed. (I did )..

Nice lookin bird. When I saw those cooked legs I though about how much I would like one. Thats a compliment.

I have a couple in the freezer and I have to go out there in awhile and resort it. Thinking I may have turkey this week, thanks for the inspiration.

BTW If you like Tony's, next time look for Tony's "MORE" spice.
