Trying to make more room in the freezers for the upcoming Salmon and Rock Cod fishing season. Wife want's to throw a smoked Salmon luncheon at her work and of course has asked me if I knew anyone who had some extra fish. Like a tub worth. Seriously I asked? o_O

In a couple tubs with your basic non iodized salt with brown sugar dry brine for 6 hours. Afterwards I lightly rinsed and onto the racks to room dry for 2+ hours. Then into the MES40 with mailbox mod for 4 hours using Alder then Apple pellets in the AMNPS.

Looks absolutely wonderful to me!
I use the dry brine method, too. But 1 cup of plain salt, to 4 cups of Brown sugar.

Hey Craig, I love your pellicle racks. Are those from your MES 40?
 
Craig... I for one never get tired of looking at your salmon pictures... I do think you need to display that lovely lady that catches all of them, a bit more often...

Yes those racks are for my MES40. Don't remember where I got them but had to add the side rails to make them as wide as the stock MES40 rack. They were a tad too deep so similar to what Masterbuilt did to the stock rack, I had to bend the back of each one upwards.

I love seeing creative ideas. So far, I have mesh mats for my MES 30 (which is big enough for me.)
I live in a Smoke Free State. I'm the only one in our home that loves smoked stuff. :confused: (More for me!)

Unfortunately, I have to fish at Costco. But it's OK. I never get skunked... LOL!
Especially since a handful of selfish people (EnvironMENTALists) closed the coast and my local lakes to fishing. :(:mad:

I was inspired to go get one of my racks, and check some of the baking pans for make shift supports. Should work fine.
And it lets me use my racks, instead of Grandma's cooling racks to do the pellical.
Better yet, the racks go right into the smoker... :p
