Hey All,

I have a household of 2 so large cuts of meat are tough for me. Not wanting to waste items you know how it goes. I was going to purchase some untrimmed tri tip roast maybe a 6 lber. .. Any tips on cooking it or trimming it? Was going to smoke it in the mb 560.
 
LOVE Tri Tip!

Use SPOG or a salt based rub, some low for a couple hours to about 125 (or more if you dont like it med rare) then sear fast and hot. the reverse sear. should turn out great.

sorry missed the trim part - everywhere here sells with the fat removed - remove the fat if it come with a fat layer and remove silver skin if there is any.

watch a video on how to cut these - its very important. its not "normal"

6lbs does sound larger than average. I think mine run up to 6 if its a two pack. usually under 3lb each.

Even better, now you have two times the enjoyment. I love smoking tri tip. I have never tried the reverse sear. I just smoke mine until it hits 130 and then wrap in foil for carryover. It's always one of our favorite meals. That may actually be my wife's favorite item to have me barbecue.

I get tri-tip trimmed in about 2.5lbs a piece. Like you a 2.5lb is too big for a normal dinner, so here is what I do. I take the full 2.5lb tri-tip smoke it to 110 deg, cool, cut in half and vac pack. When I want it, I sous vide to 132 deg, reverse sear it on grill and enjoy. This has become the best steak we have ever had.

Don't tell my wife but this morning I only had a full tri-tip frozen so I took a flat head screw driver and cleaned it and used alcohol to sterilize it. Then used the a hammer to split it so we would not waste the other half...:emoji_kissing_smiling_eyes:
 
Just wondering if you all eat leftovers. It's just me and my wife, but I always grill, smoke, roast, or braise a full tri tip, then get creative with the leftovers. We can easily get three days of dinners out of one TT. My wife won't eat the same thing for lunch and dinner, but I have no such limitations.
