I have about a 3 pound tri tip that I might try smoking. I work graveyards and want to try and start the smoke in the afternoon. So, my question is, in general, how long would a 2.5 to 3 pound take to cook at 250 or so?

Thinking of either Apple or pecan wood as that is what I have handy.

Thanks in advance

Not sure I'm guessing 1-1 1/2. I like to semi freeze mine and keep the temp around 200 or a little less and always finish off with a nice sear.

Yes probably 1 1/2-2 hours tops to get to an IT of 130-140. They don't take long. Allow a 30 minute rest before slicing.
