Had a piece of tri tip in the fridge, thought Id toss that in the smoker for dinner.

Took the tri tip out a little before hitting the smoker, hit with a layer if Meat Church Gospel with a second layer of Meat Church Voodoo, thanks @TNJAKE turned me onto these two and love them

Got the MES up to 275, running some apple chips, in goes the tri tip. About an hour and a half later, I fire up the grill to put a good sear on meat as it nears 130

Had a cast iron pan in the grill with a little butter, bacon fat and some garlic for a quick sear on each side.

Got a good sear on each side topping out at about 135ish and ready for a rest

Give it a lil rest and finally slice up this tender, smoke kissed piece of juicy heaven

Made some risotto and corn on the side, family were very happy campers. Think it was about 2.5lba, there is 2 pieces left for a smack later.
