Mixing up 5 lbs of trail bologna. No i did not emulsify this (way too lazy)

No time for a good smoke so in the fridge.

I always found Goat Meat super lean. (Like Venison and Antelope)

"Trail Bologna" is an all beef ring bologna stuffed in a smaller casing that what we normally think of as bologna. The name came from it's origin in a town called "Trail" in Ohio's Amish country at a company named Toryer's. It is generally made with more lean meat than traditional bologna and has a firmer texture. The garlic undertones are clearly notable in trail bologna, and has a more meaty flavor compared to mass marketed grocery store pre-sliced lunch-meat. Trail bologna is a descendant of German ring-wurst recipes and usually stuffed into a 2" diameter casing.

"GB" is short for ground beef.

Especially when the next shot shows a little blood in the bowl.
And the meat didn't look like Ground Beef to me. (I'm use to Supermarket mystery Ground Beef)

Not really.
When I was living on Game Meat in Wyoming for a number of years, I always soaked the animal quartered in the cleaned bathtub for 3 soaks in salt water over 24 hours.
Drew all the blood and game taste out of the meat.

Never needed to screw with market meat. But to each his own.
By all means, bleed as you will. Slit your jugular, it's fastest.
