I learned a very valuable lesson yesterday. I was grocery shopping the other day and got a yen for smoked chicken. I found a large "6 1/2 lb" chicken in the frozen case and picked it up. Yesterday, I prepped it up with some Everglades cactus dust and put it in the Camp Chef at 325. When it was done I brought to my kitchen to carve it up and have supper. I started to cut it and found it was pretty tough and difficult carve. The lesson I learned was to READ THE LABEL. I looked at the wrapping and found out why it was so tough. IT IS A STEWING HEN. I sat down to eat a leg and it was like trying to eat a radial tire only with better flavor. We are going to try to make soup out of this old bird.
