Last night I did up a 2.5 pound sirloin roast. I injected it with the old fat guys recipe of:
1/2 cup reduced sodium beef broth
1 TBS soy sauce
1 TBS Worcestershire sauce
1 tsp onion power
1 tsp garlic power
Injected at about 1" spacing.
Then gave it a loving rub down with the Pit Boys sweet heat.
Then into the smoker at 275 for almost 3 hours. Pulled at 150. Then a quick sear on the grill.
And here I apologize. I forgot the money shot! I will tell you that it came out fantastic. Tender, moist, and the flavor was awesome. Even though I ran it to 155 total. It still had a nice pink to it. Oh, in the background is my first batch of dilly beans! I can't wait to give them a try.
