I already have about 1.5 years worth of smoked cheese in my fridge, but since it's so fun and easy to smoke, I had to do a little more. I never really had Havarti before until a couple months ago and it is probably my favorite smoked cheese now. Got some Sharp Pinconning, Danish Havarti, and Vermont White cheddar Just threw em on my grill with my AMAZEN pellet smoker and 4 hours worth of apple pellets. Rested them for about a day in my fridge and now they're Vac-locked and loaded. Smoke smell was very sweet and light. I always like to vac seal them in two different blocks for better variety when opened.
