I tried my first Reversed Seared Tomahawk Steak today using Jeff's recipe from the March Newsletter. If you've never tried this you need to! I was a little hesitant when I first saw the price of the steak. But I found it on sale and decided to give it a whirl. I followed Jeff's instructions all the way thru. I used Almond wood instead of Pecan but it was perfect. I was also a little reluctant of the dry brine. I thought it was going to be too salty and the wife is a little sensitive to too much salt. But you couldn't even tell. I cook with a WSM 22" and then threw it on my Weber Gas Grill for the sear.
All I can say is, "WOW". We like our steaks Med Rare and this was absolutely perfect. And we only ate half of the steak. So my lunch tomorrow will be better than ever! Give it a try, you won't be disappointed!
