I havent smoked much in a few weeks and noticed that I had one pack of PP left in the freezer.

Went to Winn Dixie...they had butts on sale @ 1.79. Got two 5+ pounders. They had a lot of the fat trimmed off.

Gave them the usual SPOG coating and into the fridge for 24 hours.

Got the WSM ready the nite before with a combo of RO and Kingsford blue and rigged the guru to hold 225.

Using local pecan..from my neighbor K-Dog..aka Raptor.

5 am yesterday got up, fired it off and it was holdin temp at 225 in about 30 minutes.

Up to 165 and foiled by 11am and 205 by 2:30, no stall..then wrapped with towels and into the cooler for 1.5 hours.

Put a pan with baked beans filled with extra bacon and onions in the WSM to smoke for a few hours.

Pulled the pork.at 4pm and made mashed potatoes.

The Womans family showed up at 4:30 and we had a delicious meal.

 It is way good.. Course that is coming from a slaw on the sammie kinda guy.

I also foil..Tried it both ways..we like it foiled.
