did a 12 lb batch of snack stix today turned out awsome.i used a mix from curlys sausage called codyssnack sticks .they were a little plain for my taste but they had an option with the directions of adding garlic and red pepper flakes did that and 1/4 cup tabasco turned out perfect. just the way i like a bead of sweat after 2 sticks.
the pics are as follows,my right meat mixer,the stuffer,and in the smoke vault. notice the thin blue smoke in the last one. hint hint . the bummer part is the pics of the finished product didnt store on my phone
cant wait till the wife opens her new digital at x mas .lol. later bill.
p.s it was only 14 deg today and had to blow 8'' snow this morn, but the smoke vault worked great!
If I may ask, how come you didn't twist them into smaller sticks before you smoked them? Seems like you would have to cut them into smaller pieces now? Forgive me if I should get stronger readin glasses. As "Pigcircles" can tell you, sometimes I miss the obvious.
