Anybody use brown rice? Wife has never been able to figure out how to substitute brown rice for white rice in her Spanish rice. She is thinking that the problem is in the toasting process, how long does brown rice take to toast in cooking oil?

I would have to look both recipes your wife is using but in general the only difference between cooking the 2 is Brown Rice needs 30% +/- more water cup for cup than White Rice. Depending on the cooking technique it also requires more time. The average recipe has you cook the rice for X minutes, covered, then turn off the heat and let rest/steam for 10 minutes...Let the rice rest for 20 minutes and you will be fine. I let any rice I cook rest longer then suggested, usually 20-30 minutes and have not had under cooked rice...JJ

As for toasting it usually only takes 3-5 minutes on medium heat. The rice will darken a little but the true indicator that it's done is it will start to smell like roasted nuts. You'll recognize it when you smell it.
By the way, cooking oil is good to use, but butter is better.
