That is the ONLY pat on the back I need...   nepas is the sausage king in my book...  learn from him and you learned from the best...  

Keep up the techniques and ingredients recommendations....   If we don't have somewhere to see how and what is being used to make great sausage etc., we have no way to even know what to look for.....

Folks wonder why I stroll through Home Depot or Wal Mart...    Just to look for what's new and different from what I know... 

Hopefully I will find a use for it or realize, had I known about that stuff, I could have used it last year when I made something and it would have been easier or better..

Rick, it was your early posts here and in other forums that inspired me to get into sausage making. I have an entire portion of my PDF recipe library titled "NEPAS Recipes". 

So, my had is off to you, sir.....  

You sir, truly are the "sausage king" (Abe Froman has been de-throned IMO).
