time with a cross rib roast

  1. I'm going smoke a cross rib roast on my wsm. I was looking for a little direction on time. Its a 5 pound roast. I was planning on taking it to 140IT. Should I be expecting 1hr per pound? I am also going to use Chef JJs au jus recipe as it seems to be a hit on here.

  4. I just used JJ's recipe again last week with some ribeyes. It just works!

    It should only take about 2 to 3 hours based on my experience!

  6. Thanks guys. Bill was right. It took 2 3/4 hrs to hit 140IT. I'll post some q-view in a while when I slice and serve
