Good evening friends!!
Thought I would share my meal for the evening. Started this morning off by trimming the excess fat off the leg quarters I picked up the other day. After trimming I placed in ziplock bags and covered with extra zesty Italian dressing then placed in the fridge for 8 hours. I then placed some black eyed peas in the crockpot to slow cook all day with a couple of ham hocks. Around mid afternoon I pulled the chicken from the fridge and fired up my Oklahoma Joe.
These were seasoned with a salt, pepper and garlic mixture and dusted with Uncle Yammy’s BBQ seasoning. I cooked the chicken to an IT of 185 at 300 degrees using pecan wood splits.
Once done I coated with a Carolina style BBQ sauce and served with black eyed peas over rice and slaw. These turned out to be my best quarters smoked to date. Now I need the recliner!
