Sorry, no pics, but wanted to report on last nights cook. Specifically the pineapple upside down cake that is on Rec Tec's web site. I was very worried about messing up my cast iron, but it came out great and looked exactly like the one on their site. Everyone loved it and I have to say it was pretty amazing. Also did a few New York strips reversed seared and a small pork loin. All came out great. The steaks were little more done than we are used to but this was my first attempt at reverse searing. I also have to say that we tried the "pork shots" and they disappeared in the time it took me to check on the grill and return to the kitchen. I got one out of two dozen. Pics next time for sure, promise.......

Everything sounds great, I’ll have to try and find the pineapple upside down cake recipe. That sounds delicious. I’m gonna try the pork shots very soon. Chris’s pictures look awesome. I’m still working on my steaks as well. I did some New York’s last night but did regular sear. They turned out good but not consistent all the way through. There were a few bites that were like butter and that’s where I can’t wait to get with the whole steak.

Sounds like you learned smoking lesson #1: Never bring the food in before your ready to eat.

Glad everything turned out well and you had a successful evening.

Point for sure.

Chris

That sounds very good. We like cake. I too found my first reverse sear to be a tad over cooked from what I was shooting for. I got a plan for the next round and very soon!
