I make mine because I love to do it, I will spend what I have to so i can do it and be happy, Not so much on other things in my life...... I can be cheap lol
 
Fugal and I know what the heck is in it. 

Nothing like reading the label on any mass produced product and trying to say the names of the ingredients.  I was a organic chem major in college and I still can't pronounce half the stuff on some labels.

Oh yeah, and it's fun too!!!

Some of that stuff does look sad. Having said that...I tasted meats from some shops that I will not match in a million years. It might have been on a different continent.
 
Al, we said the same thing after we got home. I'm sure we'll try it next time.

Hahaha this definitely hits close to home. I am at the point where I only will go out to eat or purchase store made products that I can't or never make. It would absolutely kill me to pay 20 something bucks for a rack of ribs at a BBQ joint that I can at least match in quality, or 8.99 a pound for roast beef I can make for 2.50 when I find a good sale... or the hardest of all to swallow is a steak at a restaurant that you know is choice grade and it costs 30-40 dollars while I'd get that same piece on sale for 5.99 and have fun cooking it. My wife gets annoyed with me because I am so picky about going out to eat because I never want to feel cheated... like I overpaid for something I can make better and cheaper at home. Hahah I am cheap about food... my collection of outdoor cookers and gadgets might be another story...

It took a long time for my husband to believe I was serious when I said I wanted the KitchenAid[emoji]174[/emoji] food grinder  and sausage stuffer  attachments for my KitchenAid[emoji]174[/emoji] Stand Mixer.  I guess he thought it would be another kitchen gadget that would get used once or twice and then put away and forgotten about.  But I knew otherwise and clearly I managed to convince him somewhere along the way, because lo and behold, both items were under the Christmas tree for me last year.  Along with some all natural hog casings and a book on home sausage making.  And they most certainly haven’t been gathering any dust.

Sausage-making isn’t hard, but it is a fair bit of work.  It works best with two people, so grab a partner.  It also happens to be a lot of very messy fun, so grab plenty of rags while you’re at it.  Once you master the basics, you can play around with different flavors and recipes and even develop some of your own.  These Cheddar Jalapeno Sausages are one of our favorite creations.

Joakim's right.  It's messy fun, and yes, it's cheaper.  We can get pork butt for $1.30/lb.  Average store bought cased sausage is $2.99 a pound in these parts, and those with a reputation can push $4.00.....so, a group of six or eight of us get together three or four times a year and crank out a few hundred pounds.  Everyone has their own version, and we all sample what the others have done- cheese or pepper added, straight fennel and red pepper, and a Croation creation that I swear has potpourri as its main spice.  As many recipes as participants. Sometimes there are trades throughout the day, but always there is beer and a good time...except for cleaning the durn grinder!
 
I'm gathering materials now so I can get started. I'll admit it, I'm a bit cheap...
Cheap or not, I am not much of a fan when it comes to Mystery Meat! Who knows what all went into it and how clean they were in making it? 

IMO, Pride in workmanship and quality before quantity went out the window years ago, it's all about the money now a days!

I started making my own sausages and sticks etc as I wanted more than any of the stores offered for flavors. Its always the same old boring flavors over and over.

I now make 8 flavors of bacon 9 flavors of snack sticks numerous sausages I cant even count.

I started out making small runs for just myself and close family, nowim up to making snack sticks and sausages in 30 lb runs and selling to friends, co workers, etc. Im making 60 lbs of bacon at  a time too.

the work to make 5 to 30 lbs isn't aht much more and the pleasure I get from them enjoying what I make makes me very happy. And when they say its soooo much better than store bought is even better.
