Happy belated Thanksgiving everyone, and I hope it was a great one!
I had 3 birds to cook this year so 2 were going to go on the rotisserie and the other was to be spatchcocked and cooked above the rotisserie birds. Now I wasn't positive the two on the spit were going to fit but luckily they did although I had a backup just in case.
The rotisserie birds were 16 lb each and the spatch was a fresh 20 pounder! I used the Octoforks rotisserie claws to clamp down and hold the turkeys in place (end over end) and a 1/2" hex spit rod with a 50 lb corded motor for smooth operation.
Injected and dry brined the turkeys, the injection was 2 sticks of butter, salt pepper garlic and 2 hard apple cider!
