Here are a few assorted pics going back to Thanksgiving, hope you enjoy.
Here is a choice prime rib done. This is the third prime rib that I have done using Bear's method, and they have all turned out great. We were going to have it New Year's eve but the wife was sick so we did it the following weekend. I prefer more rare but the wife isn't in to that, so I pulled it at 142 and let it rest. It was smoked with Pitmaster Choice dust. It turned out nice and juicy.
We marinated a flank steak that was left over from Christmas, added some leftover stuffing and some black olives.
A meal fit for a king.
After all of the talk of scrapple a few weeks ago, and realizing I hadn't had any for a couple of years, I decided that I needed to get my fix, along with some scrambled eggs and sauteed onions.
This is a recipe that I ran across recently, Cornbread with breakfast sausage and jalapeno peppers mixed into it. Good stuff!
And finally, here are some burnt ends that I did in early December, I used Jeff's rub and also his sauce and smoked them with apple dust.. They didn't last long!
