planning on doing this 3 bone rib this week thinking about brining it. What do you think brine? 5.98 a pound. It’s 7.5 pounds or so. He showed me the whole rack and asked which part I wanted. I told him the thick end of course

seems like a lot of fat but these ribs are top notch!

I got some during pics for now if that’s ok?decided to brine last night. At about 10 pm and left it in a 5 gallon bucket on the counter till I put it on the smoker at 9:15. Put couple rubs on, cleaned the water pan and tossed it on in. Used apple to start the fire with some butcher paper since I need to get propane. It’s at about 140 degree here

no sprizting or anything. Just peak at my temp gauges. I need one for the door
 
Yep That’s what I was thinking . I was walking into the butcher and on my way saw a guy carrying a smallish pig. May 60 pounds. Didn’t ask how much it was tho. I’d have liked to know. It’s cooking fast already 177
 
Small hand full of salt and some other spieces and about 3 gallons of water it’s pretty much done now. I’ll let them go to about 200 maybe. It’s at 196 now

The other dog has a weak stomach so she doesn’t get one.
