When I picked up my latest smoker the guy told me he had to keep intake and exhaust vents almost closed to stay a 250. I thought that was kinda odd, but figured I'd figure it out. After cleaning a couple ice-cream pails of grease out of the bottom, I decided to try it out with some wings.

Had it running about 300 when I put them on. No sizzle. Stuck a therm through a potato and placed on rack. Smoker read 325, therm prob read 170! Opened vents and ran pretty good. now I see why he had issues, he was trying to cook at well under 200. Still have some playing to do, wings came out ok. Just a reminder on not trust factory therm.
 
I think the OEM therms are just for looks.
Like a hood ornament. A place for a bird to land on and crap on the hood.
I look at the one on my gas burner, but it's there to cover up a hole in the hood.
 
Once you figure out how far off they are you can just adjust to it.
So if the factory therm says 225 & the probe on the grate says 200, you pretty much know that you want to see 250 on the factory therm, to run at 225. I have 3 Tel-Tru's on my Lang & I can see them across the yard. They are all at grate level so I can tell what the temp is without a probe on the grate. And they are very accurate.
