Thermal Protection

I want to modify an MES 40 to control the burner with an Auber WSD-1503CPH.

And, I want to utilize thermal protection, preferrably resettable. Or, is it recommended to use non-resettable? What, if any thermal protection is the most desireable?

Additionally, since the MES 40 tops out at 275º; should I use a 300º device shutoff rating?

bypass the electronics and control the element only..... I wouldn't operate it above the 275 limit.... that is a factory design....
