I was wanting the Ooni spiral mixer, Glad I passed on it because they are breaking from all the plastic and bad gear box. I opted for the all metal Vevor chain drive.

Spiral mixer at work.
This will make 5 at 860-870g ea. Regular sourdough.
2,000g bread flour
250g WW
500g active starter
1575g water (reserve 50g for adding after the salt)
50g salt

Mix just to combine the water and flour. No starter or salt yet

That will save you a lot of time Rick. Nice mixer.
 
Nice machine.
I've looked at the spiral dough mixer attachment for the KA, but I make very little breads in the summer.

Harvested 14.5% protein wheat today. Didn't hear if my bucket got filled.
 
Looks like a pretty beefy mixer. Nice!
I like that it has the breaker bar.
My Viking mixer has a J hook and dough keeps riding up.
I have been thinking of a Famag if the Viking dies (or I win the lottery).
Might have to look into the Vevor. What model is it?
