Woke early (5am) to prep the smoker and get this 7.4lb brisket on. It's the wife's birthday tomorrow and we are having people over to celebrate this afternoon and I'm hoping to serve the brisket for dinner... We will see what the meat has in mind as I have found cooking times are more dependent on the meats time table than mine.
