 Hello Nepas, Again the sausage looks great. I have a question for you, What is the recipe you use for your andouille sausaeg? Is it something you have found , created or doctored to your taste? I have seen a few and did a spin on the nola recipe  and Emiril's. Nola for smoking Emirils was fresh. But I have not seen one with the wine in it? Just curious.

I used Len Poli's recipe, you can google and find it. Dont leave out the pequin peppers.

I used to doctor the NOLA andouille up but its wasnt close to real Jacobs NOLA Andouille.
