Did another bird today. 21 pounder came out perfect. Made some more of JJ's famous smoked gravy to go with it. Everyone loved it.

Thank you sir. I'm really starting to enjoy smoking turkeys. It's taken about five birds but I am really comfortable doing them now. I always do large ones and safety was a real concern. I've learned what I need to do with my smoker to get to 140* in 4. At any where between 300-325 I can get there in plenty of time without ending up with a dry bird. I don't think my wife will ever let another one in the oven.
