Thanks to all the great people on SMF I have learned so much.
My week/weekend some this weekend was ham, bacon, summer sausage and cheese. I got a pig from my neighbor and wanted to cure and smoke the bacon and ham myself. Thanks to all the great people on the forum I was able to get all the info I needed. The summer sausage I made was made with some venison from a friend and some ground pork butt.

I agree thou. Great members and info here.

I didn’t get any pictures of the prep but here are some pictures of smoking. Two hams at 22lbs, 30lbs of bacon, 20lbs of SS and 25lbs of lebanon bologna.

Amen to that . I'm doing things now I never even thought of 4 years ago .

Very nice job. What recipe did you use for the Bologna. I used to get great Venison Sweet Bologna from Twin Pines Farm in York County but have yet to find anything close...JJ

3lbs venison
2lbs ground pork butt
3 ounces leggs #116 seasoning
0.2 ounces Cure #1
1 cup brown sugar
1/4 cup honey
1.6 ounces of soy protein
0.6 ounces of citric acid

I made a batch a few weeks ago and only used 1/2 as much honey and brown sugar. It turned out good but wasn’t very sweet so I doubled it up this time.

Stuffed into 6” cloth tubes and smoked for about 20hrs

3 tubes in the front are the LB
