Well, I got a deal on some 7-Rib Ribeye (4.50lb-Select/not the best marble'n) from HEB around the Holidays--So now it is time to Smoke some up for Football and see how they are.
I cut the Ribs off and made 1" Cuts from the rest-doing the 1" cuts today.

Being select I’d probably inject with a nice savory beef broth, but that’s just me.
 
Hmm... 1" thick rib-eyes on the smoker. No doubt can be done to get to a desired IT, but might have to watch it carefully though. At only 1" thick, think I'd opt for the grill instead.
