Hello folks. I've been lurking here on and off for several years but recently joined in large part so I could follow a couple of the resident sausage kings' threads. Mainly nepas(huge fan of his) but there are a half-dozen more that I watch. You guys have a wealth of knowledge which you share freely. It is much appreciated. I have been smoking meat for almost 20 years but sausage is my current interest. So far I have only made sausage from wild game(venison, pig and duck). I'm also an avid hunter.
