Ok, fellows, I had a friend from Texas, that went home for TG-Day & promised to bring me back some Texas BBQ.
I always thought I made some pretty darn good brisket, but the brisket he brought back certainly was a humbling experience.
He had a bag of it & it looked like mostly slices of the flat, but it was refrigerated & Judy & I just took one bite & both looked at each other like WOW.
I immediately made 2 brisket sandwiches & added just a little BBQ sauce & we absolutely devoured them. I can't imagine how good this would have been sliced hot right in front of you.
I NOW HAVE A NEW GOAL TO SHOOT FOR. Oh and by the way this didn't look like a prime or even a choice brisket, there was hardly any marbling in it, but it was soooo tender & juicy. With just the right amount of smoke flavor! I would have taken some photo's, but it looked like nothing special, that is until you eat it!!!
I think the number 1 thing on my bucket list has now become to take a few weeks & go from BBQ spot to BBQ spot all across the south.
Anyhow when you Texas guys (GaryS) brag about your brisket, I now know what your talking about!!!
Happy TG-Day to all!!!
Al

Glad you enjoyed it, there are some fantastic BBQ places in Texas, And we Texans do take a lot of Pride in our Briskets
Nothing like smoking a Brisket or 5

Sounds like a really good friend ya have there Al.
To not only bring you some good TX brisket BBQ, but to blow your mind with it.
I know it had to be near orgasmic to get you talking about it.

When I was a long haul trucker I ate a lot of BBQ, BBQ was my favorite place to stop for food.
I found a lot of mediocre Q, thankfully relatively few were actually bad, and the real blessings were those very few that were heavenly.
I'd drop a $Benjamin buying pounds of meat to put in my truck's fridge from the really good ones, and then gorge for several days.

Their are SO MANY places to get good Texas Brisket. The vast majority are good and some are just amazing. Their are the designer resturants with their prime cuts and great flavor and atmosphere but there's nothing better than to walk into a BBQ joint in a small town that has 100 yrs of history & smoke staining their walls, be served on butcher paper and a cold coke in a bottle - few slices of onion & pickles on the side. DAYUM!

Makes it even harder trying to cook this stuff at home when the bar is set so high! But we try and sometimes we get close :)

Thanks for the info Gary, I knew as soon as I tasted it, that is was something special!!
I'm guessing he uses locally sourced meat, right?
Al

Yep, most all these places have a special source they buy from. One way they are so consistent.
One guy I know buys only from one ranch that sells grass fed, no antibiotics, Angus

Not been to TX yet or ever had brisket that was wow (I always try it whenever I see it tho). I knew IT existed with all the rage about it and this pretty much confirms it.

You can actually order food from Mueller via Goldbelly...

If you want to talk brisket tech let me know. I have been seriously researching. IE Mueller's rub is 9:1 black pepper to salt.
