On metal temp probes like the ones that come with Mavericks, How much of the probe is actually doing the measuring?
I have worked with thermocouples that are just the two conductors twisted together for less than an inch.
 
I just got off chat with Thermopro. I was told the probes like the ones used with their TP-20 are using thermocouples and the sensor is located in the smallest portion of the probe tip, just like instant reads.
 
No better place than from the horses mouth!
