If I placed a ceramic (flower pot bottom) dish inside my water pan instead of water, wouldn't that create a a more of a "dry" heat by removing the humidity altogether therefore creating...crispier chicken skin?

IMHO....the amount of moisture absorbed by the ceramic would be marginal. Open vents and good air flow would be more beneficial.
 
I have been using a 12 inch terra cotta (not ceramic) plant saucer in my wsm since I got the smoker...

Never have had a problem with anything being too dry..

I smoke chicken at 275-300 and get plenty of crispy skin..

the ceramic dish would hold your temp down. its not a moisture thing , its a heat sink thing.

IMO , when cooking chicken you want to go hot and fast. empty water pan. maybe even no water pan at all , depending on your smoker.

crisp skin is much easier to get with a real hot fire.
