Thought might be a good time to bring thread back up. We getting ready for some winter weather here in North Texas. Probably means some ice. Looks like going to be stuck home for a few days. Getting ready to make chili. I kind of stuck on this recipe. No beans this time as trying to keep low carb. Just used ground beef last time but will use breakfast sausage this time. I make it the Over The Top way. Chili

1.25 lb of ground beef
.75 lb hot ground sausage
1 onion
2 cans of Chili Beans
3 cloves minced garlic
2 dashes of louisiana hot sauce
1 Tbsp Chimayo chile powder
1/2 Tbsp of the Ancho chile powder
1T beef bouillon
1T cumin
1t paprika
1t oregano leaves
1t unsweetened cocoa
1t white sugar
.5t coriander
1 can Beef Broth
1 can diced tomatoes
1 can Tomato Soup
2 Diced roma tomato
1 diced jalapeno

While this isn’t exactly a recipe it shows my chili method:

Add whatever “seasoning mix” you prefer understanding this already has a fair amount of heat. If you want beans, just add during the last hour or so. I did this batch a week or ago with just chuck and shanks (with cheddar jalapeño honey cornbread):
