Hi every one, i am new here. One question about beef tallow. I rendered some tallow and noticed that not all tallow is the same. Some is softer and has a lower melting point then others. The one that surrounds the kidneys is the hardest one. If you try to cook with it, i noticed you have to eat the meal while it is pretty hot, otherwise it starts to be kinda sticky at your palate, and not everyone likes it. Is there a solution for that? Some of the other tallow I rendered is melting already at room temperature, and it does not have the same effect. Thank you in advance.
