Sweet Onion and pork tenderloin with apples.

Smoked a lot of food today.  My first whole turkey for Thanksgiving and Pork Tenderloin for dinner and the kids Spanish class,  

The turkey is in another post already.  

The first half of the TL is going to be turned into Pork Mole' for the kids Spanish Class. The other half is dinner for Daddies belly,  

The Mole' post will come later this week when Mrs. Mo finishes making it.

Here is the dinner.

at 140* and into the pan with 4 Honey Crisp apples  and a whole sweet yellow onion. Then poured a mix of honey crisp apple cider and brown sugar. Then covered with peppered bacon, just for good measure.

Tender and juicy took the juice, strained and added a cornstarch slurry to thicken it and it was a wonderful onion and apple sweet  sauce for the rice.
