So this was a little while back, but I finally decided to post it up. Forgive me if i can't remember all the details. I did a rub with a little bit of everything..maple syrup first then cayenne, chile, onion, and garlic powder with brown sugar. then did an injection that was a mixture of apple juice and all the same seasonings.  Wrapped it with pepper bacon and smoked it to an internal temp of about 165 (I had the "is it cooked all the way" crowd over for dinner") it turned out really really good.

Looks good from here! I hope 165 didn't dry it out too much. Do you have any sliced pics to add?

Looks great! And that sounds like a method I'll need to try for myself... Thumbs Up

Looks delicious, next time try 145 and tell the guests you cooked it to 165.
