Is there a store in central California where you can buy high temp cheese or casings? At a reasonable price? Or where is the best site to order it online?

I get mine from a smaller butcher shop that makes sausage. They sell me what get in bulk for $5 a pound. Worth checking with any meat shops around.

Used a local shop to start out for casings & have used Lem lately. Put my own spices together, just keep written recipe log when mixing.
