pulled pork sammies, sliders from home ground chuck & crab & montery stuffed abt's.Oh and cracklins I makeing today.

Im smoking a 14lb packer brisket along with some MONSTER abt's, some of Dutch's baked beans and potato salad. I found some jalapenos at Kroger that are about 6 inches long. Biggest Ive ever seen. Ill post some pics of everything later.

Going to friend's house for the game. I'm smoking 2 - 5lb butts, two fatties and I will make about 24 BBQ tator skins.

My skins are the bomb. Bake the potatoes in the oven the day before. Let them cool, scoop them out and stick them in the fridge (keep the potato for soup, mashed, or whatever). Then the day of let them come up to room temp, stick them in a 425 oven for about 15 minutes to crisp up some. Melt some butter and brush on the inside of the skins. Then put a heaping pile of pulled pork on each one. Cover with your favorite sauce. Put some sharp cheddar on. Stick back into the over until cheese is bubbly. Pull out and put a dollop of sour cream, chopped green onion, and some bacon bits. I promise, there will be none left.

i got a boston butt (5lb) and a hog ham (about 3-4lb) on the smoker right now and there 1 degree from being pulled off, ill be shreading those things in about 1 hour or so and i also had thrown on some hog backstrap and tenderloin (both rubbed with jeffs rub and then wrapped in bacon and rubbed once more) man those bad boys are wonderfull!!! I have to eat like junk food tonight so i dont eat all the meat for the game.

and for those to be pulled i fixed up some of SoFlaQuer's finishing sauce

I HIT THE TEMP, LOOK FOR POST OF THE Q-VIEW ON MY PULLED PORK!!!!

5.5# bone-in pork butt rubbed down with a slight amount of poultry rub wrapped in the fridge for an early morning start tomorrow.

Will add a rack of pork ribs trimmed down to St. Louis style and possibly a small eye round roast.

I'm a Steelers fan by heart, but am putting my allegiance towards the Giants tomorrow. Little brother following in big brother's footsteps is a sports story for the ages!

Mentioned in another thread, but i have the following going:

Dutch's baked beans
6lb brisket
8lb pork butt turned into BBQ tamales
grilled rum soaked pineapple
30 ABT's
potatoes (with onions, butter, etc. foiled and grilled)
For dessert, apple crisp and I'll get the chocolate fountain going

I started smoking for the super bowl on Monday. I smoked a 12 lb sirloin that i cut up to make chili with. Had to make to pots on hot one mild. Have to keep wife happy. Now its time to go light up the smoker for the 6 racks of ribs i have to smoke. Have about 30 people coming over for the superbowl/poker party.

Ok I'm not smoking today :(
I'm DEEP Frying :)

Chicken wings, I have them in the White Sauce marinade now for some added flavor. Some will be Hot wings and I will be trying out something new.. I will be trying to make a Parmesan pepper sauce for some of the wings. The Local Planet wings has this flavor and it's real good.
Blue cheese on the side with some Mozz cheese sticks and a few Ice cold Heineken premium. After half time the Capt will be docking...

Me too, but I pre-smoked them yesterday and plan on giving the a bath in hot oil later.

Let us know how the Parmesan pepper turns out---sounds good!

q-view to follow later after its all put together

tho.........the candian bacon that i made is/was a flop..........next time......DRY BRINE........the wet brine/injection just didin't werk............NO nice pink/red color........JUST a tiny hint of pink, and dryer than a popcorn fart...........*sigh*

so the homemade pizza will have to use store bought pepperoni......
3 diff kinds of hot wings.......abts......abts with nappies.......poppers.......mozz sticks, and the smoked cheese platter........oh yeah........smoke some hard boiled eggs last nite.....cold smoked em...........needed to come here and ask questions bout it, but mediacom, my IP, was done last nite, and JUST came back on.......

They came out pretty yummy, the flavor is first crisp, then moist, then smoke, and a slight kick with the hot sauce---in that order:-) I definately will do this again!!

The pics are posted on "Q-View Bowl-no words-only todays Q-view!"

Go Pats--7 to 3 and 1st and ten

I searched the net to a recipe for the Parmesan pepper wings and everything said to use fresh cheese and then bake.. I wanted FRIED wings not baked.
So I went to the store and looked at salad dressings and found a Parmesan pepper dressing. I put some in a tupperware bowl tossed in a few warm wings and tossed.. They turned out great... I also made some hot sauce to make hot wings.
I cut up some potato's and made some chips also... The Mozz sticks went fast.. No pic of them
