i thought i would start this.........tho it will get buried and someone else will start one later in the week........hehehe

i am doing the wings, thats been discussed today in several spots........
crab ragoon.......pot stickers........hot smoking a candian bacon saturday, for sunday..........home made mozz sticks, with my smoked cheese, and home made poppers, maybe some abts.........

smoked lil smokies in bbq sauce, or maybe a red adobe sauce...........

hehe.....i know the old lady is........she gets ready to do summin and i say STOP.........i need to go get the camera.............
 
I'm thinking of breaking the deep fryer out and do some wings the proper way... DEEP FRIED.... Then mixed in my blend of Franks hot sauce, with some blue cheese dressing kicked up with extra blue cheese chunks mixed in.
I may smoke some for 1 hour first and toss in the fryer for 3-4 min to crisp them.. While the fryer is on I will probably do some mozz sticks and I might do some fried dough with powdered sugar... The wife loves that..

Was thinking of marinading in White sauce before cooking the wings..
 
i have a question i started a thread with........bout cold smoking wings first if that was viable.........i know chicken is iffy.........but yeah.......plan on frying em up........maybe tho just in a skillet.......

whats a white marinade for wings dude......
 
Hey WD I figured I would help out keeping this on top. Do you make your pot stickers from scratch? If not I have a good dough and filling recipe. that we use.
 
WD here is the White Sauce recipe... I got it on the site in a post a while back. I used it 2 times and I like it.. Smoking seems to cancel the flavor from the sauce out.?? I smoked some wings and cooked some on the grill from the same marinade and i could not taste it in the smoked wings, the grilled wings were real good. I like to Marinade over night.

White Sauce

1 egg
1 cup cooking oil
1 pint apple cider vinegar
3 tbls salt
1 tbls poultry seasoning
1 teaspoon pepper
1 teaspoon sugar -- up to 2
Blend egg in blender, add oil untill blended, add remaining ingredients.

white cloud..........yeah........momma has her own recipe........we use wonton's, with a pork/mini shrimp for the filling

Oh yeah, and Lonestar on tap if my keg kit arrives in time... not looking like it though... hasn't even left California yet.

you smoked the cheddar or the horseradish........hmmm.......smoking horseradish.....wonder if that can be done.......

i am surprised you can't get a keg kit closer to home..........i know of several liqour outlets and sell the makings for a fridge keg thingy bobby....
 
I didn't actually smoke the cheese, my wife got it from the butcher already prepared, but it is really good. It is basically a horseradish cheddar cheese that they smoked. Pretty good stuff, with a little zip.

I might have been able to get the keg kit locally, not sure. I browsed ebay on Sunday and found the one I bought through Beverage Factory. Looks like a pretty good kit, I just wish iT WOULD GET HERE!
 
man why can't i find summing like that around here.........sounds WONDERFUL.........i DO like my horseradish.......
