Summer Sausage, Polish kielbasa sausage and Bratwurst sausage

We fill up the freezer when they put pork butts on sale. This the last of them so hope

they go back on sale soon.

10lbs of Summer sausage ( 9lbs of beef and 1lbs of pork)

10lbs of Kielbasa sausage ( 7lbs of pork and 3lbs of beef)

  5lbs of Bratwurst sausage( 4lbs of pork and 1lbs of beef))


Still was a little frozen on the inside when I cut it up


Got 12 lbs out of the two butts

Had to buy a new Grinder. Was on sale for $79

She said it looks like a snake so she put some MM for eyes.


Summer Sausage


Got both sides of the AMNPS going


Using my UDS . Had to use 3 racks to get it all on


The AMNPS is working great with the mailbox mod. I love the great temp. control that

I have with my UDS. I put about a half a charcoal basket full then 5 hot coals to put on top.

Started out 130 and bumping it up 10 degrees every hour. All I have to do is move my

ball valve just a little bit to get it up 10 degrees .

Cut the kielbasa and ready to spend the night in the frig.

This is the last of the Summer Sausage to come off.


Fried some eggs and kielbasa for me


Wife made some scrambled eggs and kielbasa


The kielbasa turn out great !!!!!
 
Got all the sausage dated,sealed and ready for the freezer.



Looks like the summer sausage turned out good.

Thanks everyone.
About to put the brats in the smoker . They should be done in about 2 hours .
Will post some pictures when they come off.
 
That looks fantastic, and instantly made me hungry for some kielbasa sausages looks like I will have to cook some up this week.
