Tomorrow these are going in the smoker. I'm using the Hi Mountain summer sausage blend that one of my kids got me. But, I'm kicking it up a degree or two. I added mustard seeds, a bit of garlic, smoked cheddar cheese. And three minced jalapenos. Sorry. I didn't take picks of the process. But here they are ready for smoking tomorrow. I'm a tad nervous about being able to keep the smoker at the right temp. So perhaps I should just use the oven again, which has worked fine. I need to get a MES! These sausages are 3 pounds each.

Snacking on some summer sausage as we speak. You could start in the smoker and if it won't cooperate switch to the oven. My MES with PID controller is ideal for stepping up the temps gradually.

That's how I finished my first run with SS. More then likely that will be my plan tomorrow. If I get a couple hours of smoke. Then go to the oven. Then it should work out ok.
 
What smoker do you have?
 
It does ok. But at low temps it spikes at times. At higher temps it does well. I've used it for jerky at 160 and left the door open a touch to help which worked good. I can give that a try.
 
Lowest I could get that one was 145, that's using the valve on the bottle. Just cracked open and the door cracked.
 
Hmm, didn't think about doing that. I can try that as well.
 
You have a pellet tube? That adds heat too, more then the tray. I used a tube. Maybe should have tried the tray but didn't think it would stay lit in the propane smoker.
 
I have a tray. And it doesn't stay lit in the smoker. I should get a mail box mod going.
 
Yup that would keep the heat out of the smoker too
 
That will be my next project. I've been wanting to do this for awhile anyway.
 
And here they are! I really like the results. The jalapenos and the smoked cheese added a very nice flavor. But, I'll add a bit more jalapenos the next time.
