So I'm trying my first round of summer sauage


Got a couple quick questions just to make sure I don't get any one sick. Having tons of problem with the MES in the cold & rain. Tried to dry out at 120 for a few hours & the temps were everywhere between 115-130. After 2 hours I bummed up to 140. Again spikes between 135-150. Now I'm up to 150 & im still fluctuateing between 145-160? Gonna stay there for 2-2.5 hours. My questions is will the fluctuations hurt the end product? I'm gonna keep going till the it is 150 but with this being my first time I'm wondering if this will not set the sausage?
 
Looks good.

Meat will start to set and firm between the 130-140 IT. Your safe to pull at the IT you did. If your running out of time when you make more try to skip the water and just let them hang. The heat remaining in the meat will work and bring them to a closer IT of 152. Also putting a hot chub in a zip lock baggy, rolling all the air out will keep the heat in longer, you can always check the meat IT with a thermo probe.
