Flare the end to direct the meat into the tube... Slide it in one of your plastic tubes so it will seal for stuffing...

SPP, I need to use my 5# stuffer for small tubes as my 11 pounder is trying to shove too much mass(larger diameter canister) through that small tube. As others had said I still need to add water before stuffing as the mix has sat in the fridge for a day. IMHO extra water doesn't take away from the flavor but does add time in the smoker for the extra moisture to dissipate. My 11 # stuffer is for 32/35 mm casings and larger.
