Hey everyone...I picked up my first smoker back in April and have finally gotten around to posting some of my favorite dishes. This one is a pork tenderloin, stuffed with cream cheese and jalapeno slices, wrapped in bacon and smoked over Apple wood chips. It turned out great!
First, cut the Tenderloin like a hotdog bun. Once cut, stuff with jalapeno's.
Next, cover the jalapeno's with a generous dose of cream cheese.
After that, cover the Tenerloin with strips of bacon.
Keep smoker at approximately 225 degrees for 3 hours and this is what you will get...
Delicious!
