Stuffed pork loin

Looks VERY good, Charlie.  Stuffed loin is a favorite around here, but I've never used cream cheese--gonna try it.  All the herbs you used would be great, and the sun dried tomatos are a perfect match.

Man here I'm just getting serious about trying some kind of sausage and you come out with something like this.

That sure is a pretty roast cranky. Great job! It's got me thinking about what I could stuff into a couple of the pork loins I have in my freezer.
If you can get it to roll up, you can put most anything inside of it!  The great thing about pork is that most any veggie or fruits works well with it.

Nope, I use an Old Hickory butcher knife that I've had since my first wife and I got married in 1986...  Looks like this, but mine's a LOT older and scary sharp.
