Just north of Pittsburgh
Picked up a couple pre Stuffed chops from a local butcher. Seasoned with a little SPOG and my pork rub and decided to hit them in the cast iron. Temp gun said it was running 460* when I put them on to sear, 8 min on side 1, flipped about 5 min on side 2 and then into a 375* oven for 25 min with about a half a cup h2o and a splach of Worcestershire. Took them to 155* and rested for 10 min (prefer our chops a little more done). While they were resting, made a pan sauce with a little slurs and all the amazing flavor bombs on the bottom of the cast iron the chops were cooking in. Little broccoli and mashed potatoes, littlered wine and... dinner is served.

That's something I haven't had in a long time, since I was a kid. Mom would make stuffed chops once a month.
Looks mouth watering.
