Stuffed Peach Pork Loin

I wanted to try a stuffed Pork Loin . Got some Peaches to fill it with.

They had a small Pork Loin at the store in town.

first time cutting one open like this, not bad for first time . Next time will try to cut it

Put some brown sugar , pepper , garlic salt and paprika on it


got this smoker on clearance awhile back. So wanted to see how it works before doing

any mods. to it . Seasoned it this morning then put the loin and potatos on .

the temp from one side to the other was about 50 degrees different. Figure I can put

the potatos on the hot side and hope they get done when the loin is done.



The temp gauge in the lid was pretty close to the probe temp. that I had on the grate right

under it.

Good deal on the smoker. That same grill sells for 250 at my local tractor supply. Looks good and I cant wait to see the final product.
 
Looks good. Great job on cutting for the peaches. I love pork and peaches together.


When we do something like that we will cut them down a bit so it is easier to roll. Fresh peaches and apricots seem to be easier to work with as well.

You don't know how happy it makes me to see a fellow "Q" er pull the loin before 145°, brings a tear to my eye.

Can't go wrong with a smoker at that price!

jrod, looks yummy, I have never tried that.  Never tried pork with peaches in any way.  Now I have to try this.  Sounds so good I'm starting to drool on the keyboard.  Steve
 

Looks great, nice pairing :o)  Have to try it.  Did a 4lb loin on my Bradley last night.  Brined it over night with apple juice, water, kosher salt, garlic and pepper then stuffed it with double-smoked sausage and wrapped it with bacon.  Smoked it and topped it with home-made BBQ sauce.

it was yummy, next time going to cut the peaches into smaller pieces and put more in it.

It really depends on what you have available to you and personal preference. If you can get ripe fresh fruit, that is my preference to use. However the availability of ripe fresh fruit is seasonal. Now their are big food chains that are getting fruit from other countries, so the seasons are blurred. If you choose to use canned that is fine as well, I have and gotten great results. Just remember some canned fruits have sugar added. Why I mentioned cutting them down a bit was the juices that are on the fruit and the size make it a bit challenging to work with. The fruit will move around a lot and even want to slide out. So doing a large rough chop will help and you can even a very little bit of bread crumb to help absorb the moisture. Not so much it is like a stuffing, but just a little to give it enough body that the fruit is the star, but easier to manage.


The pork loin pictured looked perfectly cooked. I hate it when people over cook it. Thumbs Up

Man O man that looks good!  Gotta try one this weekend. I'm wondering how it would work instead of slicing down the loin, if you pierced it with a large sharp dowel in a couple of places then stuffed the peaches into the holes and secured the ends with toothpicks? maybe a sprinkle of rub on the fruit too......mmmmm, gotta go to the store now............
